Oh, you guys. I have been waiting for over a month to share this fabulous recipe with you!
Guacamole is one of my all-time favorite foods. And although traditional guac is really healthy – I have little self control with this particular food. It’s so easy to “accidentally” eat 500 calories worth of guacamole. You know what I mean?
Which is why this skinny guacamole recipe rocks my world. It meets my most strict requirements:
- It’s healthy – There is not a processed ingredient to be found in this recipe. Peas are packed with vitamin K, lemon juice alkalizes the body, garlic is full of antioxidants and nutrients, and the list goes on. Plus, it’s much lower in calories than avocado guacamole (just 48 calories per serving), and it’s fat free.
- It’s delicious - Reading the list of ingredients, I was initially skeptical about this dip. But let me tell you, this stuff is good. I kept going back for more – I couldn’t help myself!
- It’s cheap – I bought a bag of peas for 99 cents. Everything else I had on hand at home. All in all, this appetizer recipe cost less than $2.

Lately, I have been having the best luck finding cookbooks at thrift shops. A few weeks ago, I stumbled upon a fabulous healthy eating cookbook called Color Me Vegan, by Colleen Patrick-Goudreau. The book organizes foods by color, coinciding with health benefits associated with brightly colored fruits and vegetables. This skinny guacamole recipe is only one of many recipes that struck my eye.

Green Pea Guacamole Recipe
Yield: 6 servings
Total Time: 10 min
Money-saving tip: Frozen peas are usually much cheaper than fresh peas, and they taste just as good.
Ingredients:
1 1/2 cups green peas (fresh or frozen)
1 teaspoon cumin
1/2 small yellow onion, coarsely chopped
2 cloves garlic, peeled
2 to 3 tablespoons lemon juice, divided
1/4 teaspoon cayenne pepper
Salt and pepper, to taste
1 Roma tomato, seeded and choppedDirections:
Place peas, cumin, onion, garlic, 2 tablespoons of lemon juice, and cayenne pepper in a food processor or blender. Blend until smooth. Taste, and add salt, pepper, cayenne pepper, and/or more lemon juice if desired. Pulse a few times to incorporate seasonings.
Place in a serving bowl and top with chopped tomato. Serve as you would guacamole: with tortilla chips, with crackers, on toasted bread, etc.
